Valentine’s Day Love
It’s the 15th here already, so Valentine’s Day 2019 is in the books. And let me tell you, this Valentine’s Day was the best one I’ve had, possibly ever?!!
Why was this year so good? Guys, my heart is just SO full this year and yesterday was even more special because I was surrounded with my loves that I’ve chosen. Yes, this is a romantic holiday and all but I’m choosing to celebrate with loved ones.
My best friends, Bhavesh and Ted, arrived from London last night. I hadn’t seen Bhavesh since Paris and Ted was here last year on business.
No pictures were taken last night of us. We were all in the moment. And my bestie, Ana, also came round and it was like old times. It honestly didn’t seem like we hadn’t seen each other in 1.5 years. That’s when you know you are friends for life, am I right? 😉
So I had them round for dinner, well, in all fairness, all I did was decide on the menu and Karl did the heavy lifting. He’s such an amazing cook, I intend on keeping him around forever! I hope he doesn’t mind!! 😀 And of course, my little man, George.
But I also wanted an easy to make dish and for some weird reason, I’ve been hankering for Mexican chicken. Not sure how Mexican it is, but it’s super easy to make in the slow cooker – prep time is minimal! And it turned out soooo good! Super tasty and so, so easy to make. There weren’t any leftovers unfortunately because I definitely wouldn’t mind having some more tonight. Guess we’ll definitely make it again soon!
It was a simple evening – no fuss, no frills. Just a whole lotta love for the people in my house last night with good food, good conversation and LOTS of laughter. Think this is what Valentine’s Day should be all about and last night “reset” my soul from previous crappy Valentine’s Days. HA!
